Door County Chefs would like to share a recipe for one of Door County’s iconic dishes. Door County Cherry Bread Pudding is available anytime at Harbor Fish Market & Grille in Baileys Harbor. Executive Chef Kara Walker loves using locally grown cherries to make this delectable dessert truly a Door County favorite. Enjoy your dessert looking out at Lake Michigan from the dining room or from a table in the pet-friendly garden (weather permitting).
Door County Cherry Bread Pudding from the Harbor Fish Market & Grille
1 loaf Brioche or Texas toast
3 cups Door County cherries
1 tsp cinnamon
3 cups Half and Half
4 egg yolks
2 whole eggs
1 cup sugar
1 Tbsp vanilla
Cut bread into 1 inch cubes and layer cubes and cherries in a 12 by 5 inch bread pan.
In a separate pot, bring to boil 1/2 and 1/2 vanilla and cinnamon. Turn off heat and let stand. Mix eggs and sugar in a bowl then slowly drizzle the cream mixture into the eggs to temper them. Return to pan and heat until boiling.
Drizzle custard over bread and cherries. Sprinkle with cinnamon sugar and bake in a water bath for 1 hour and a half at 350 degrees.
Serve warm with whipped cream or ice cream and a few cherries. Serves 10
