Carnival season traditionally begins on January 6th after Twelve Night and runs through Fat Tuesday, or Mardi Gras, which ends at midnight before Ash Wednesday. Called Carnivale in Latin countries, this is a season of merriment, dancing, and feasting preceding the Catholic fasting season of Lent—hence the translation of “Carne — Vale!” to ”Meat — farewell!”
