Shiitake Crusted Chicken from The English Inn in Fish Creek
- Chop 2 ½lbs Shiitake Mushroom Caps, Roast with ¼ cup Olive Oil at 400 degrees until golden (Approx 15 minutes) Let cool and mix mushrooms with 5 cups Bread Crumbs
- Mix 2 cups Flour with Salt & Pepper
- Prepare Egg Wash
- Prepare Chicken Breast- Pound between paper
- Dredge Chicken in Flour, shake off excess
- Dip in Egg, let excess drip off
- Coat with mushroom mixture
- Brown one minute on each side
- Bake for 10 minutes
