Question: What are some simple recipes for changing up my Holiday Side Dishes?
Executive Chef Blake Schar of Cooper’s Corner in Fish Creek, and host of the “Blake’s Bites” cooking videos (check the link below!), shared a few twists on classic Holiday Side Dishes to liven up your table this year:
Chipotle Cheddar Corn Casserole
Whisk 5cups corn, 2 eggs, 1 cup heavy cream, 1/2 cup shredded cheddar, 1tbsp pureed chipotle in adobe, and salt and pepper; pour into buttered 1-quart baking dish. Bake @ 375 F for 30 minutes.
Lemon Garlic Brussels Sprouts
Toss 2 pounds halved Brussels sprouts and 2 thinly sliced garlic cloves with 1/4 cup olive oil, 1 teaspoon each grated lemon zest and salt. Roast @ 425 F for 25 minutes. Toss with 1tbsp each lemon juice and grated zest.
Bourbon Sweet Potato Mash
Bake 4 pounds sweet potatoes @ 375 F for 55 minutes. Let Cool!! Scoop out flesh and puree with 4 tbsp of butter and 1tbsp bourbon. season with salt and pepper.
