EGG HARBOR, WI – Slated to open in April 2017, Glacier Ledge, the casual fine-dining restaurant experience that is part of the Door Artisan Cheese Company, is getting ready for its first season and couldn’t be more excited about what it will have to offer residents and visitors of Door County.
Glacier Ledge will feature a tantalizing menu for both lunch and dinner. Glacier Ledge will have indoor seating for 60 as well as outdoor seating for 60. Inside, you will find an elegant dining space with a beautiful atrium featuring floor to ceiling windows giving you a sense of bringing the outdoors indoors. There is also a magnificent fireplace made with Door County field stone that is the centerpiece of the restaurant. The spacious outdoor seating deck overlooks beautiful woods and will feature two fire pits, a spectacular water feature, live music, craft beers, premium wines and mouthwatering creations from Executive Chef Lawrence Hutchinson.
Glacier Ledge is thrilled to have Chef Lawrence overseeing the fine cuisine selections. Chef Lawrence presents with a very impressive pedigree. After graduating from one of the best schools in the country, New England Culinary Institute in Vermont, Chef Lawrence took a job with the Ritz Carlton in Marina del Rey, California. He rose to be the Assistant Sous Chef after only 2 years. He moved on to work in several restaurants and for catering companies feeding film crews in Los Angeles. He was able to hone his skills on a food truck there feeding hundreds a day-serving stars including Tom Hanks, Arnold Schwarzenegger, Warren Beatty and Ellen DeGeneres.
Because of his California upbringing, Chef Lawrence’s focus has always been on fresh and seasonal ingredients. He called his restaurant cuisine “California Bistro” because it was approachable, seasonal and everything was fresh-the freezer was for ice cream!
Chef Lawrence ran his restaurant and event facility in Orange County California for 7 years before moving to St. Louis, Mo. There, he took a position teaching culinary students about running restaurants, food history, health and nutrition, and beer, wine & spirits. He used this time to devote himself to learning and teaching, sharing his love of the craft.
Though Chef Lawrence was a teacher for several years, he considers himself a perpetual student. He believes in learning as much as possible about food and its origins because that is how you elevate it to its finest self. He says technique is the answer to creating great tasting food. Use food that is fresh and seasonal and bring out the flavors of each ingredient.
Chef Lawrence and Glacier Ledge look forward to using Door County and regional ingredients to create a delicious and fun dining experience for Door County residents and visitors.
