Question: I love the cheesecakes at Harbor Fish Market & Grille and I know that you make them right there. How do you keep the cheesecakes from splitting when you cook them?

Thank you for the lovely compliment! Actually, it is pretty simple to keep cheesecakes from cracking. I simply put a small metal pan in the oven that contains about a cup or two of water. The extra moisture from the water in the oven keeps the cheesecake moist so it won’t crack.
